Jeff Keys’ focus on simplicity, variety, and seasonal ingredients combined with the ease of flipping through this cookbook makes creating homemade salad dressings easy and satisfying. Cindy's review: The loud place for pretty people on CAA rooftop - Chicago Tribune - Chicago Tribune

Perched on the rooftop of. I said: Perched. Rooftop of the Chicago Athletic Association Hotel is Cindy's, the loudest restaurant I've ever had the pleasure of dining in and not holding one conversation. Let this not reflect the quality of the cooking, which is quite good under chef Christian Ragano, but the noisiness is such that it colors your experience from start to finish. While this can be a royal pain if you like your discussions of quantum physics over quinoa salads, it reflects a fortunate problem for Cindy's. With Instagram-Liking views of Millennium Park from its outdoor terrace, and a glass sunroof that floods late-evening summer light into the dining room, the restaurant has become wildly crowded with beautiful people. On a weekend night, Cindy's might serve upward of 600 customers — that's Cheesecake Factory numbers, in a space with only six picnic tables, two longer communal tables, plus a handful of couches and some counter seating. Once dishes start arriving at the table, the restaurant's philosophy becomes clearer and begins to explain the decibel levels. Cindy's is the antithesis of the small plates ethos, the restaurant concept that has rocketed to popularity in the past decade. Instead, we're talking dishes that approach catering portions, with prices to match: $16 grilled asparagus, $24 meatballs, $42 roast chicken, $72 Lowcountry seafood stew. These aren't so much shareable plates as share-obligatory platters. To me, it suggests a restaurant more conducive for large parties than one-on-one dining. In fact, reservations are only available for tables of four or more. (Cindy's will be on OpenTable imminently, I'm told. ) My dining partner and I showed up on a Saturday at 5 p. m. and crossed our fingers. There was a line in the lobby just to board the elevator for the rooftop, and our wait time shortened only after several in front of us gave up their spots. ) Thirty minutes later, we snagged one of the precious few tables for walk-up customers, a large picnic table that seats six. My companion and I found each other so far apart, with noise levels so raucously high, we might as well have communicated with semaphore flags. Add together the noise, the crowds, lake views, picnic benches, massive portions (a $250 cocktail for 20. ), then look at the food coming out — Cindy's is Chicago's first restaurant serving New Buffalo, Mich. Chef Ragano — an alumnus of the Park Hyatt Chicago and Glencoe's Guildhall — presents dishes that favor the light and refreshing, where even heavier sounding dishes have a buoyancy to them. Luscious hamachi crudo features bright notes of yuzu and orange, with corn relish and fingertip-size dollops of avocado puree — summer by the sandy shore encapsulated. Creamy grilled corn elotes have the requisite zing of lime juice, further enhanced with charred scallions. A sense of balance even comes in a starter as rich as burrata, in which the buttery sweet cheese contrasts with appealingly bitter charred broccoli rabe, chunks of spicy salami and an aged balsamic vinegar that gives the dish its boozy demeanor. The cote de boeuf arrives with 2 1/2 pounds of prime rib-eye steak, chimichurri, charred carrots and a polenta closer in consistency to creamed sweet corn. Though wait times to get in the restaurant will test your patience, once you're seated and ordered, the food arrives at a brisk pace. Our picnic table stacked with full platters, our waitress must have thought the two of us were nuts to order, ostensibly, enough for a bachelorette party. It was at this point she pointed out a secret not listed on the menu. Many (but not all) of the dishes are available as half portions at half price, and even those will generate leftovers. Desserts are exempt from this offer, but just as well since we easily cleaned the plate. Pastry chef Jove T. Hubbard presents an adult version of ice cream sandwich, where the filling is peach-lambic sorbet and mascarpone ice cream, with an oatmeal cookie containing so much butter it's like biting into pie crust. The Michigan blueberry pie is nothing special, though those with vivid taste memories will appreciate its straight-ahead presentation: a streusel-like crust, fresh and.

Winter salad
I often roast vegetables in winter. This time I added red Bartlett pears which are hard as a rock here, and when they ripen they rot. Roasted they are wonderful! Add roasted red onion, roasted Hubbard squash, walnuts or pecans, feta cheese (or chevre if that suits you better, or any cheese you like here...) on a bed of mixed greens and pour on a little really good balsamic vinaigrette. The bottled vinaigrette here is OK, but homemade is really much better. As always, a special thanks to all of you who drop by to look, comment and fave!

i've perfected my homemade balsamic vinaigrette and now i want to eat salads pretty much every single night. early supper tonight (because i was famished from not eating lunch) was this giant salad with broccoli, sweet peppers, assorted greens, cherry tomatoes, carrots, english cukes, goat cheese, ground black pepper and balsamic. we've been eating a small version of this on the side of most meals for a couple months now and i'm not sick of it yet. also, like to switch it up with pears, plums, strawberries or blackberries instead of the veggies. dressing recipe (which i don't measure so i'll do my best to guesstimate): 2 cloves garlic 1 shallot (small to medium) 1/2 C good quality balsamic 1/2 extra virgin olive oil 1-2 T dijon mustard (depending on how spicy you like it) 2 t honey freshly ground black pepper For me the key is doing equal parts oil and vinegar so it thickens up nicely. I make mine in a measured dressing cup that came with my immersion blender, but you can mix...
