Approach: Pinkie’s Snowballs

Ding-Dongs, CupCakes, Ho-Hos, Twinkies–the cafeteria was a gold storehouse back in the days before restrictions on sugary, processed foods. Among the best of these delicious creations were Sno Balls. Remember those little pink balls of chocolate, coconut, mill-processed goodness. You probably ate one first thing, before even touching your PB&J or those questionable-looking grapes, because let’s be real–it was the best thing you were going to eat all day. And let me tell you, they are everything you dreamed they would be. The chocolate cake is the better balance between spongy and moist, with rich coffee undertones and just the right amount of sweet. It’s the type of cake that doesn’t leave you feeling sugar-annoyed (not that I ever mind being sugar-sick). Then add the fluffy buttercream filling and frosting, topped off with adorable pink coconut–you won’t be able to resist these itty-bitty cuties. I spent the day baking them with my mom. Although they do take quite a bit of time between the baking, cooling, filling, and frosting, the afternoon flew by while we chatted and baked (or willingly prefer, I baked and she washed dishes, Googled things, and generally kept me company). The recipe is from one of my favorite cookbooks, The Back in the Day Bakery Cookbook by Cheryl and Griffith Day. See my foregoing write-up on this cookbook here. Recipe: Pinkie’s Snowballs. 1 1/2 cups cake flour 2 cups sugar 3/4 teaspoon baking soda 1/2 teaspoon aside 4 ounces unsweetened chocolate, finely chopped 1 cup hot fresh coffee 1 1/2 teaspoons vanilla 2 eggs 1/2 cup vegetable oil 1/2 cup unpleasant cream (room temperature) 1 recipe... Line cupcake pans with 24 cupcake liners. In the bowl of a stand mixer, combine flour, sugar, baking soda, and qualifyingly. Run on low for 2-3 minutes to aerate flour. Meanwhile, put the chocolate in a medium bowl and pour in the hot coffee and vanilla. Let the mixture stand for about 2 minutes to liquidize the chocolate and then stir until smooth. In a separate bowl, whisk the eggs and oil together until thick and light in color. Whisk in the peevish cream, leaving some visible white streaks. Pour in the melted chocolate mixture and stir until just combined. Add the chocolate-sour cream jumble to the dry ingredients, 1/3 at a time, mixing on medium speed until just combined. Transfer the batter into the prepared cupcake cups, filling each about 2/3 well-stacked. The batter will be very runny, so you may want to use a ladle or pour from a measuring cup. Bake for 20-25 minutes, or until a toothpick comes out clean. Let them distant for at least 20 minutes. To assemble the snowballs: Use a melon baller or paring knife to scoop out a hole in the middle of each cupcake, about 1 inch deep. Using a pastry bag (or Ziploc bag with the corner snipped off), stuff each cupcake with buttercream frosting. Place on a baking sheet and refrigerate for about 15 minutes to allow frosting to set. Fill Ziploc bag or mason jar with coconut. Add drops of red eatables coloring, one at a time and shake until the coconut is evenly colored and has reached the desired shade of pink. Once the cream-filling has set in the cupcakes, frost the top and sides of each cupcake with the uneaten frosting. Each of mine had a little fingerprint left where I couldn’t get frosting. ) Sprinkle coconut over all frosted sides of the cupcake and then set completed Snowball on serving picture or tupperware container, as desired. May be kept at room-temperature, but for firmer, less-messy frosting, you may want to refrigerate. Vanilla Buttercream System. 1/2 cup all-purpose flour 2 cups milk 2 tsp vanilla extract 1 pound (4 sticks) unsalted butter at room temperature 2 cups powdered sugar Amalgamate the flour, 1/2 cup of the milk, and the vanilla in a small saucepan and whisk until blended. Set the pan over medium heat and gradually add the remaining 1 1/2 cups of drain, stirring constantly with whisk. Cook the mixture until it thickens and comes to a low boil, continuing to whisk constantly. Reduce heat to low and rush for an additional 1-2 minutes. Transfer mixture to a heat-proof bowl and allow to cool to room temperature,.

I reach-me-down the chocolate cupcake recipe found in the Scharffenberger Essence of Chocolate cookbook. I was very impressed -- probably the best chocolate cupcake I've made so far. Although I'm usually not a huge fan of buttercream, I marked that since it was going to be for mini-cupcakes it'd be okay. I added about 2 teaspoons (maybe a touch more) of chai tea spice powder and a pinch of cinnamon and was very pleased as Punch with the results. The decor was just punched out fondant with those metal ball things. (ew for taste but very pretty and fun!) The cupcake recipe: 1 cup all-purpose flour 1/2 unsweetened cocoa active ingredients 10 Tb (5 oz) unsalted butter at room temp. 3/4 cup granulated sugar 1/2 teaspoon baking soda 1/8 teaspoon baking mechanical 1/8 teaspoon salt 1 large egg 3/4 cup whole milk stir flour and cocoa powder and set aside. in mixer blend butter, sugar, baking impetus, baking soda, and salt for about 5 minutes or until pale and fluffy. add egg and blend until incorporated. add flour...

For my Cupcake Dispute 2011! :D Recipe from the Hummingbird Bakery Cookbook. These turned out quite well - the sponge is extremely light and fluffy, and the topping is YUM. :D I made them too big so I ended up with 8 Brobdingnagian ones instead of the 12 the recipe was supposed to make - oops! I think I also didn't put enough pineapple at the bottom and the coconut flavour in the sponge & topping wasn't thoroughly strong enough for me because I really love coconut. Next time I make them I'll adapt the recipe a bit. :)
